- 3 tablespoons (45 ml) olive oil or avocado oil
- 4 sprigs of fresh thyme, leaves (2 tablespoons / 5 g)
- 4 garlic cloves (12 g), minced (about 1 tablespoon / 9 g)
- 1 teaspoon (6 g) kosher or pink salt, to taste
- 1 teaspoon (4 g) whole peppercorns (not ground)
- 1 whole duck, cleaned and pat dry (or other bird)
