- 5-6 fresh peaches (about 5-6 cups/750-900 grams), peeled, pitted, and sliced (or use 4 cups, about 600 grams of canned peaches in juice)
- 3-4 tablespoons (45-60 ml) raw honey or 1/2 cup (100 grams) granulated sugar, or brown sugar
- 1-2 teaspoons (5-10 ml) freshly squeezed lemon juice (to brighten flavor)
- 1 teaspoon (5 ml) pure vanilla extract
- 1 teaspoon (2.5 grams) ground cinnamon
- 1/4 teaspoon (0.5 grams) ground nutmeg
For the Batter
- 1 cup (125 grams) all-purpose flour
- 2-3 tablespoons (45 ml) raw honey or 1/2-1 cup (200 grams) granulated sugar
- 2 teaspoons (8 grams) baking powder, for the rise
- 1 teaspoon (4 grams) baking soda, for the rise
- 1/4 teaspoon (1.5 grams) fine sea salt or baking salt
- 3/4 cup (180 ml) whole milk, or half&half, at room temperature
- 1 teaspoon (5 ml) pure vanilla extract
- 6 tablespoons unsalted butter (1/3 cup, melted): 85 grams or 80 ml

How to Make Spiced Peach Cobbler
Preheat oven to 350°F (175°C). Arrange the oven rack to in the middle position.
Prepare the Baking Dish: Place the butter in a 9x13x2-inch (23x33x5-cm/3-qts) baking dish and put it in the oven while preheating, allowing it to melt. Leave the oven on.
➤ Tip: Use a ceramic or glass baking dish about 2 inches (5 cm) deep. If the dish is too deep, the center may heat too slowly, preventing the batter from rising before it sets.
Prepare the Peaches: In a medium saucepan or cast iron skillet, combine the peeled and sliced peaches to 1/4-inch thickness, sweetener, lemon juice, vanilla extract, cinnamon, and nutmeg. Cook over medium heat for about 3-5 minutes, stirring occasionally until the peaches release their juices and the sweetener dissolves. Remove from heat and set aside.
If you’re using canned peaches, skip the cooking step.
➤ Tip: Don’t overcook the peaches — just heat on the stovetop until the sugar dissolves. They’ll soften more in the oven, so keep them firm to avoid a mushy filling.


Make the Batter: In a medium bowl, whisk together flour, baking powder, salt and sweetener. Pour in the vanilla extract and milk stir just until the dry and wet ingredients are combined — lumps are okay.

Assemble the Cobbler: Quickly and carefully pour the batter evenly into a prepared baking dish over the melted butter, Do NOT mix with melted butter, but smooth it out into an even layer.
Add Peaches: Spoon the peach mixture (with juices) evenly over the batter. Leave gaps for the batter to rise through. Do NOT stir—it will bake up with a nice layered effect.


Bake: Bake for 35-45 minutes, or until the cobbler is golden brown and the batter is cooked through.
