- 1/2 cup (8g) finely chopped fresh spearmint leaves
- 1/2 cup (60g) finely chopped green onions (aka. scallions)
- 1/4 cup (60ml) high-quality extra-virgin olive oil
- 1/4 cup (60ml) freshly squeezed lemon juice (about 1-2 lemons)
- Salt and ground black pepper to taste
