1. Prepare the onions: Peel the onions, cut them in half through the root, and slice them thinly and evenly. Uniform slices will cook and caramelize at the same rate.
2. Soften the onions: Heat the olive oil and butter in a large, heavy-bottomed skillet or Dutch oven over medium-low heat. Add the sliced onions, salt, and black pepper.
