How to Make Balsamic Chicken Thighs

Marinade: Combine avocado or olive oil, fresh thyme leaves, salt, ground pepper (to taste), and balsamic vinegar in a measuring cup or bowl. Whisk to combine (it should look like a thick caramel consistency).

Marinate: Place chicken thighs into a resealable bag or container, pour the marinade over the chicken, and give it a good massage to ensure they are well covered. Marinate in the fridge for at least 60 minutes, preferably overnight. Just don’t overdo the acid, or it can make meat mushy instead of tender.

Marinating Tip: Marinating meat isn’t just about adding flavor—it’s a secret for tenderizing. Marinade help break down tough muscle fibers, making the meat softer, juicier, and more enjoyable once cooked.

Grill or Sear: Heat a cast iron grill skillet over medium-high heat. If using a grill, heat it to 350° to 450°F (175°C to 230°C). Grease the grates with oil if needed. Grill the chicken thighs on both sides until browned and the internal temperature reaches about 160°F (71°C). Remove them from the grill or skillet. Wrap them in heavy-duty aluminum foil and allow them to rest until fully cooked, reaching an internal temperature of 165°F (74°C), about 5-10 minutes.

Tip: Leave the chicken thighs out on the counter for at least 30 minutes before grilling or cooking. Bringing the meat to room temperature results in more even and faster cooking.

Garnish and Serve: Garnish with fresh herbs like chopped parsley or fresh thyme leaves and serve hot with your choice of side dish and sauce.

Serving Suggestions: Serve chicken thighs over a bed of black rice alongside fresh arugula greens, drizzled with balsamic glaze, and topped with a vibrant strawberry-avocado salsa for a wholesome, flavorful meal. For extra texture, sprinkle with toasted almonds or pepitas (pumpkin seeds). This dish also pairs beautifully with grilled corn, roasted sweet potatoes, or a side of herbed quinoa for a more filling plate.
